Lemon Curd
A few months ago I went to this local place that sells vegan food and they had crepes on their menu. One of the options was a lemon creme crepe which sounded delicious! I was ordering lunch at the time and not in the mood for something sweet but the idea has stayed in the back of my mind ever since.
Tomorrow is pretty much my favorite day of the month. It's book club night! I get to host this month and I am serving crepes. I figured this would be the perfect time to try out a lemon creme crepe. So I did what I always do and googled "vegan lemon curd" and came across this recipe at Nom Nom Vegan Noms: http://nomnomvegannoms.com/?p=421
I followed the recipe and it turned out delicious. So far I have spread it on buttered toast (by buttered I mean spread with earth balance), crackers, and straight off the spoon. I am excited to try it on a crepe tomorrow.

How This Began
I guess you could say my husband started it. A while ago he decided he wanted to eat mostly vegetarian meals and asked that I try and incorporate his preference into our dinners. I didn't quite see the point but I love him and want to make him happy so I agreed. I started leaving meat out of dinners completely a few nights a week and trying to make him a vegetarian version of what I was cooking on other days. That went okay for a while but fizzled out a little.
Then one day I decided to get fit. This wasn't just a fickle "New Year's Resolution" type decision. I was, and am, committed. Obviously if you want a strong fit body you have to eat right. I had a nutrition class about 2 years ago so I had a basic knowledge of nutrition, but I wanted to combine that knowledge with weight loss so I did some light research online. I wasn't looking for a fad diet or a way to lose weight fast but something that would help me get rid of extra weight I was carrying and yet be healthy enough to continue when I reach the level of fitness I want to get to. What I found was mostly eat LOTS of fruits and vegetables.
Then one day at book club two of my dear friends were talking about a documentary called "Forks over Knives". They said that the study it was portraying concluded that eating animal products (including dairy) will greatly increase your chances of cancer and heart disease. This intrigued me because I was sort of headed towards a fruit and veggie based diet anyway. I watched the show the next day on Netflix and that's all it took! I was convinced. I have been trying to eat vegan ever since. I do not claim to be a "vegan" though because I do occasionally indulge in my omnivorous side and eat some meat or cheese and I personally think excluding honey is silly. But I intend to post only vegan recipes on this blog, with the occasional honey added.
